Lemon Butter Fish

Serves:

4 Servings

Ingredients

  • 4 small-medium sized firm white fish fillets (cod, halibut, or mahi), about 6-inches in length

  • 3 tbsp melted butter, salt or unsalted

  • 1 medium lemon juice and zest

  • ½ tsp kosher salt, or to taste

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ¼ tsp freshly ground black pepper

  • 3 tbsp olive oil

  • Basil or parsley leaves, freshly chopped, for garnish

  • Extra lemon slices, to serve

Preparation

Grill/Griddle


  1. Use paper towel to pat fish fillets dry. Set aside.

  2. In a medium bowl, combine melted butter, lemon juice and zest, ½ tsp kosher salt. Stir to combine well. Add more salt if needed.

  3. In a separate bowl, combine remaining ½ tsp kosher salt, paprika, garlic powder, onion powder, and black pepper. Evenly press spice mixture onto all sides of fish fillets.

  4. Place Grill/Griddle plate on Cooker and touch the FISH button. Touch the - / + to adjust desired temperature. Add olive oil, once heated add fish fillets, cook 2 at a time. Cook each side until fish becomes opaque, firm in the centre, and browned, about 3-4 minutes per side. Lightly drizzle some lemon butter sauce while cooking, save the rest for later. Season with salt and pepper, to taste.

  5. Serve warm with remaining lemon butter sauce, basil or parsley, and lemon wedges.
