Ingredients
1 ½ cup grape or cherry tomatoes, quartered
6 cloves garlic, minced
4 tbsp extra virgin olive oil
2-3 tsp balsamic vinegar or to taste
½ tsp kosher salt or to taste
¼ tsp freshly ground black pepper or to taste
6 – 8 fresh basil leaves, thinly sliced
15g Parmesan, grated or finely shredded (skip this step for dairy-free)
16 slices of baguette, French bread, or similar Italian bread (½ - inch thickness)
Preparation

Plate: Grill
Place grill plates onto the Grill Master and preheat both to 230°C by touching the On/Off button. Touch OK to start preheating.
With 2 tsp of oil, brush the bread on both sides. Once preheated, place all pieces of oiled bread onto the hot plates grill each side for around 3-5 minutes, heat until lightly brown.
While the bread is grilling, prepare topping. Stir together the tomatoes, salt, pepper, vinegar, garlic, and basil with the remaining oil.
Keeping the upper plate at 230°C, reduce the lower plate to 120°C by touching TEMP twice (lower plate temperature will blink) and touch the – button to lower the temperature. Move all toasted bread to the lower plate and distribute the tomato mixture evenly on each piece, then top with the Parmesan. Setting the cover height adjuster at the highest, close the upper plate until it is sitting just above the Parmesan. Cook until the cheese is just melted, for about 5 minutes (set timer to desired duration).
Remove and serve immediately.
