Ingredients
1¼ lbs ripe Roma tomatoes, about 5-6
1 can petite diced tomatoes
½ medium onion, chopped
1 jalapeno pepper, seeded (optional for more heat) and roughly chopped
A handful of fresh cilantro
1 large garlic clove, roughly chopped
2 tbsp fresh lime juice
½ tsp chili powder
¼ tsp ground cumin
½ tsp granulated sugar (optional)
Kosher salt and freshly ground black pepper, to taste
Preparation
Combine all ingredients in a food processor and pulse until all ingredients are finely chopped.
Refrigerate for at least 2 hours for more flavour.
Serve with your favourite dishes.
May store in refrigerator up to 1 week.
